What's up tonite?



Hubby has been working late these past 2 weeks. I decided to boil ginseng chicken soup cos the Chinese believe that stress and lack of sleep make your body heaty which may cause sore throat, cough, etc. The ginseng is meant to reduce the body's heat while chicken will give him energy and protein.

Ginseng chicken soup
40gms ginseng Panax root
1kg chicken cubes (ribs or thigh)
10 dried red dates
1 tablespoon of wolfberries

Put chicken pieces into 1 medium pot of boiling water (high flame). Add ginseng, red dates and wolfberries. Reduce to small flame and continue boiling for 2 hours. Occasionally, you have to add water to replenish. Add salt to taste.

Other dishes to go with the soup are Dark Sauce Stir-fry chicken breast and Garlic Bok Choy. Does anyone agree with me that garlic is really heaven sent? It adds taste to just about anything and is so aromatic.

Dark Sauce Chicken
Marinade chicken for 1 hour prior to cooking and then just stir-fry over medium heat for 5 minutes.

1tsp dark soya sauce
1tbsp light soya sauce
1tbsp castor sugar
Tinge of white pepper

Garlic Bok Choy
Rinse bok choy (or siu pak choy), separate the stems and leaves. Heat wok with oil, fry chopped garlic till fragrant, add in stems and fry for 2 minute, then add leaves and fry for another 2 minutes. Add half tsp of light soya sauce and fry for 1 minute. Dish out.

I have a feeling I'm gonna be stuffed tonight!

No Fuss Lunch


This morning my stomach felt a bit queasy, I think it could be a wind build-up due to irregular meals. I often experience this flatulence so I know it is important to eat at regular intervals.

I have lack of appetite now so this is what I had for lunch: dry instant noodles with bok choy, yellow capsicum and a hard-boiled egg. Time to prepare: 5mins.
